Ok, This one was inspired by Bear's "Mexican Fatty" thanks Bear)!
This fatty was pretty easy to do. I started with two pounds of homemade spicy Italian sausage placed inside a gallon size plastic zipper seal bag. I used the bag & flattened the sausage into a big patty, then slit the sides of the bag open.
I added 8 oz. shredded Mozzarella cheese with some roasted red pepper diced up and mixed in. I rolled the sausage & cheese into a log & sealed the ends shut. The log was rolled up inside a 1 lb. bacon weave 16 slices low sodium bacon).
I hit it with some rub and onto the 350° smoker it went for about 1 hour. We sliced it thick to go on some toasted buns and topped with some sauteed onions & homemade marinara sauce.
