I used some hickory smoked pulled pork for this.
Lined my cast iron skillet with sliced potatoes, seasoned with salt.
Filled with pulled pork and minced onions, drizzled with hot Q sauce then topped with shredded cheese.
Added the top layer of sliced potatoes, sprinkled with dry rub, dotted with butter and smoked with hickory until hot and bubbly.
One thing I would change.. I would add more butter to cover the top potatoes to keep them from drying out.
I drizzled with more Q sauce before serving...
